Homemade Laundry Detergent
 1 Nov 2014, 11:12 am

•1 bar (or 4.5 ounces) of shaved bar soap (a homemade laundry bar, Dr. Bronner’s, Ivory, ZOTE, or Fels-Naptha)
•1 cup of borax
•1 cup of washing soda

Thoroughly stir together for 5 minutes and enjoy the results! You can take this a step further and blend the mixture in a blender or food processor to create a powder that will dissolve easily even in cold water. (Just be sure to let the dust settle before removing the lid of your blender or food processor so you don’t inhale the fine particles.) Store in a sealed container with a small scoop.

To Use:
Use 1 Tbsp per load (or 2-3 Tbsp for large or heavily soiled loads).

White Chicken Chili
 28 Oct 2014, 4:48 pm

2 Cans White Beans
1 Can diced tomatoes
1 Medium onion, chopped
1/2 green bell pepper, chopped
1 tbsp. Olive Oil
5 tbsp. all-purpose flour
4 cups chicken broth
2 cups milk
1 teaspoon Tabasco, or to taste
1 tbsp. chili powder
1 teaspoon ground cumin
1/2 tsp. ground garlic
1/2 tsp. onion powder
1 bay leaf
Dash of oregano
1/2 teaspoon salt, or to taste
1/2 teaspoon white pepper, or to taste
1 4-ounce can green chilies
1 lb. ground chicken
5 tbsp. butter
Accompaniment: tomato salsa, sour cream, shredded cheese

In a large pot cook onion and ground chicken in 1 tbsp olive oil over moderate heat until browned.  Add beans, tomatoes, chicken broth, Tabasco, green chilies, green bell pepper and seasoning to pot.  Bring to boil and reduce heat and simmer for 30-45 minutes.

In a separate small pot make the roux during the last 10 minutes.  Melt the butter over moderately low heat and whisk in the flour.  Cook roux, whisking constantly until it is a golden honey color.  Gradually stir in the milk and continue cooking for one to two minutes until thickened.  Immediately pour roux into chili and let simmer for 5 minutes.
Garnish chili with sour cream, shredded cheese and salsa

Easy Refrigerator Pickles
 31 Aug 2014, 1:24 pm

Refrigerator pickles are easy to make, and there's no need for kettle steamers, special jars, and vacuum-tight lids. Plus, unlike store-bought pickles, these scrumptious homemade pickles are low in sodium.

Yield: 7 cups (serving size: 1/4 cup)

6 cups thinly sliced pickling cucumbers (about 2 pounds)
2 cups thinly sliced onion
1 1/2 cups white vinegar
1 1/2 cups water
3/4 cup sugar
3/4 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/2 teaspoon ground turmeric
1/2 teaspoon crushed red pepper
1/4 teaspoon freshly ground black pepper
4 garlic cloves, thinly sliced

Place 3 cups cucumber in a medium glass bowl; top with 1 cup onion. Repeat procedure with the remaining 3 cups cucumber and remaining 1 cup onion.

Combine vinegar, water and remaining ingredients in a small saucepan; stir well. Bring to a boil; cook 1 minute. Pour over cucumber mixture; let cool. Cover and chill at least 4 days.

Note: Pickles may be stored in the refrigerator for up to one month.

An easy recipe for homemade apple pie moonshine. A strong and flavorful seasonal drink.

½ gallon Apple Cider
½ gallon Apple Juice
¾ cup Sugar
¾ cup Brown Sugar
1 750ml bottle of EverClear or Grain Alcohol
4-8 Cinnamon Sticks

5 Quart Sized Mason Jars with lids

Add all ingredients, except for the alcohol, to a large stock pot and bring to a boil. Stir until sugar has dissolved. Turn off heat and let cool to room temperature. Once the mixture has cooled, stir in the alcohol. Pour into clean mason jars and add in 1-2 cinnamon sticks per jar. I add two into quart size mason jars. Seal and place in the fridge or cool, dark room.
It's best to let it set for about two weeks.
But be careful - this stuff is potent!! Sip wisely.
